Flank

The flank is located on the underside of the animal below the loin primal. The brisket / plate / flank are often grouped together as one primal cut or they may be considered as separate primal cuts.

Subprimal Cut Retail Cuts Description
Flank Flank Steak Flank steaks are very lean and are full of flavor. The flank steak is also known by the following names:
  • London Broil
  • Jiffy Steak
  • Flank Steak Fillet
Ground Beef Ground beef is often produced from trim from the flank, it must be at least 70% lean.)

FLANK STEAK  RECOMMENDED COOKING METHOD: Marinate and broil/grill
Barbequed Beef Flank Steak


2 beef flank steaks  cut 1 inch strips
Salt

Marinade ingredients:
1/3 cup fresh lime juice
1/4 cup chopped fresh cilantro
1 tbls packed brown sugar
2 teaspoons minced chipotle chilies in adobo sauce
2 tsps adobo sauce (from chilies)
2 cloves garlic, minced
1 tsp freshly grated lemon peel


Mix marinade ingredients in a bowl.
Put flank steak and marinade in a lidded container and turn a few times to coat steak well.
Marinate in refrigerator overnight (or at least 8 hours)
Remove steak from marinade and put on rack on medium, ash-covered coals.

Grill flank steak, uncovered,for 20 minutes for medium rare , turning occasionally. Carve steak across the grain into thin slices. Season with salt, as desired.
